Sounds like your fuel pressure regulator is the problem. You're wanting to see 60PSI. 80PSI is pretty high, you may be locking your injectors until the pressure bleeds back off.

According to VDO, a person would need a device that could convert from GM CANBUS protocol to J1939, and such a box could speak to their gauges. No idea how to go about this though.
